We’ve only done entrees on the blog so far, so this time we decided to do a dessert. Specifically, we prepared the Pioneer Woman’s chocolate lava cake. Yum. This recipe is from the episode “Us and Them”. You’ll need ramekins for this recipe. It’s pretty simple to make and takes about ten minutes to prepare and ten minutes to bake. Our serving suggestion is to add a scoop (or two) of your favorite ice cream (we just had plain vanilla) on the side. If you want to make it with dark chocolate, it will require tweaking the recipe a bit. We may try that eventually, but this time, we just stuck fairly closely to the original recipe.
Nel’s Notes
When we dug into our chocolate lava cakes, we didn’t get the lava effect, which was a little disappointing. But, hey, it’s chocolate, right? It’s still incredibly yummy. The recipe calls for baking the chocolate lava cakes for 13 minutes, but that appears to be a bit too long for our oven. When we try this recipe again (and we WILL try it again), we’ll cut the baking time to 10 minutes.
Eric’s Tips & Tricks for Pioneer Woman’s Chocolate Lava Cake
- For a more diabetic friendly recipe, replace the sugar with equal parts Stevia. It’ll save you 49.5 grams of sugar per serving.
- For more intense chocolate flavor, try adding a little brewed coffee.
- Reduce baking time by a few minutes if you don’t get lava with the first batch.

We both had one serving with a scoop of vanilla ice cream.
